Dialling in espresso

By Editorial team

Every new bag of espresso needs a few shots to dial in. Change one thing at a time and taste each shot.

Start with a recipe

18 g of ground coffee in the basket, about 36 g of espresso in the cup, in 25 to 30 seconds. Weigh both; it is the only way to know what changed.

Then adjust the grind

  • Sour and fast: grind finer.
  • Bitter and slow: grind coarser.
  • Balanced but thin: try 40 g out instead of 36.

Once it tastes right, write the setting on the bag. You will thank yourself tomorrow morning.
