A coffee bean is the seed of a cherry. Processing is how the fruit comes off before the seed is dried, and it changes the cup as much as the roast does.
Washed
The fruit is removed and the beans are fermented in water, then dried. Expect a clean, bright cup: think Ethiopia Guji or Kenya Nyeri.
Natural
The whole cherry dries in the sun with the bean inside. Expect more body and fruit, sometimes a little wild.
Honey
Some of the sticky fruit is left on during drying. It sits between the two: sweet, round and fruity.
