Care guides

Enamelled cast iron

Heat it up slowly and never plunge a hot pot into cold water. Hand-wash, then dry on a low flame.

Carbon steel

Rinse it hot, dry it on the hob and wipe a thin layer of oil over it while it is warm. It will darken; that is the seasoning.

Olive wood

Hand-wash only, dry upright, and rub in a little oil once a month.

Knives

Hand-wash and dry straight away. Hone weekly and sharpen twice a year.
